Black Bean Breakfast Roll-Up

2 eggs
2 tablespoons water
1 tablespoon canned chopped green chiles
2 to 3 tablespoons Hurry-Up Black Bean Dip
1 tablespoon grated cheddar cheese
7 or 8-inch whole wheat or multi-grain tortilla
2 tablespoons Hurry-Up Salsa


Lightly coat 8-inch round baking dish or pie plate with non-stick cooking spray.  Add eggs and water.  Beat with fork until blended.  Stir in chiles.  Cover tightly with plastic wrap.

Microwave at 60% to 70% power for 2 to 3 minutes or until egg mixture is just about set in center.  Gently spoon Black Bean Dip over eggs. Sprinkle with cheese.  Place tortilla on top of egg.  Cover tightly with plastic wrap.

Microwave at full power for 20 seconds or until heated through and cheese is melted.  Invert onto plate.  Roll up with egg inside.  Cut in half.  Top with salsa.
Makes 1 to 2 servings.
