Hurry-Up Black Bean Dip & Salsa

1 (15-ounce) can black beans, rinsed and drained
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1 teaspoon freshly-squeezed lemon juice
2 to 3 tablespoons chopped sweet gherkins
Salt and pepper to taste



Place beans in shallow bowl and mash. Stir in olive oil, garlic, lemon juice, sweet gherkins and salt and pepper to taste.

Hurry-Up Salsa

1 (8-ounce) can tomato sauce
1 teaspoon ground cumin
1/2 cup sweet pickle relish

In small saucepan, combine tomato sauce, ground cumin and sweet pickle relish. Bring to a boil. Reduce heat and simmer for 5 minutes or until a bit thickened. Cool slightly. Transfer to jar with tight-fitting lid and refrigerate.
