1 onion, chopped (about ¾ cup)
2 cups drained Cains Sweet Mixed Pickles, chopped
3 cups cooked wild rice, brown rice or white rice
1 cup mayonnaise
1/3 cup milk or half-and-half
2 tablespoons Cains Sweet
Mixed Pickles juice
1½ teaspoons curry powder
Salt and pepper, to taste
½ cup roasted & salted peanuts, chopped
At serving time, arrange lettuce leaves on salad plates. Add chopped peanuts to salad and mix. Top each lettuce leaf with salad. Make 6 (one-cup) salad servings.
TIPS FOR THE COOK
1 cup of raw rice will yield about 3 cups when cooked.
Turn this salad into a meal by adding chopped cooked turkey or ham.
